GRAPE VARIETY: 90% Pinot Noir, 5% Chardonnay, 5% Pinot Grigio
TECHNICAL INFORMATION: alcohol – 12,5%, acidity – 5.7%, sugar – 0 g/l
PRODUCTION: This wine is made from grapes hand-picked at the mid-September. The wine is fermented with natural yeasts for 10 months. What sets this wine apart and makes it so sought after is a process called ‘Col Fondo’. After fermentation, the wine is bottled with the fine lees present inside. These lees are composed of sedimented yeasts which are not removed by disgorgement. No sulphites or artificial additives added.
TASTING NOTES: A slightly cloudy wine with a barely perceptible lemon yellow color. Perfectly rounded and balanced, with delicate aromas of acacia and elderflower, it charms with its combination of fresh pear, lime and ripe green appie flavors complemented by chalky minerai notes. This wine is an ideai companion for appetizers and cold snacks. There is no better choice than medium-aged goat cheese. Or prosciutto di Parma with fresh arugula, a drizzle of olive oil, freshly squeezed lemon juice, fresh figs, papaya, berries. lt alsogoes perfectly with warm egg dishes, poultry in cream sauce andpolenta. Best enjoyed at the temperature of 3-6 °C.
