PRODUCTION: This wine is made from grapes hand-picked at the midSeptember. The wine is fermented with natural yeasts for 200 days. What sets this wine apart and makes it so sought after is a process called ‘Col Fondo’. After fermentation, the wine is bottled with the fine lees present inside. These lees are composed of sedimented yeasts which are not removed by disgorgement. No sulphites or artificial additives added.
TASTING NOTES: This highly popular wine is of a light colour and can be recognized by its slightly cloudy look and many fine bubbles due to the Col Fondo process. It has delicate aromas of white flowers and green apples with a hint of bitter herbs. In the mouth this wine has a high acidity, a touch of minerality and leaves a long fresh aftertaste. Best enjoyed when served chilled
at between 3-6 °C.
