PRODUCTION: This wine is made from grapes hand-picked at the mid-September. The wine is fermented with natural yeasts for 200 days. What sets this wine apart and makes it so sought after is a process called ‘Col Fondo’. After fermentation, the wine is bottled with the fine lees present inside. These lees are composed of sedimented yeasts which are not removed by disgorgement. No sulphites or artificial additives added.
TASTING NOTES: This elegant pale salmon-pink colour spumante is light-bodied, with a variety of red fruit aromas, specifically strawberries, raspberries, cranberries and red currants. It pairs beautifully with starters of crustaceous and salmon. The wine is made with the Col Fondo technique (meaning maturation on its yeast sediment) for additional complexity. Best serving temperature chilled at 3-6 °C.
